Shanghai crab is a Chinese delicacy that is enjoyed from autumn to winter, and now it has been combined with a popular dish from Mala University.Crabs are said to cool the body, so they are yin in the yin-yang theory, and our chili dishes are yang, meaning they warm the body, so this is a logical way to eat them.Enjoy a taste of China in Japan at Mala University, where authentic chefs serve authentic Chinese cuisine.

1. Couple's Lung Slice / Beef Tongue, Stomach, and Achilles Tendon in Sichuan Mala Sauce

A typical Sichuan appetizer.This offal dish, created by a hardworking couple in Chengdu in the early 1900s, remains hugely popular today.

2. Chilled Stem Lettuce (Chishato)

In Japan, it is called mountain jellyfish, and during the Qing Dynasty it was also called emperor's vegetable as it was a tribute to the emperor.
